Organic whole chickens are dry rubbed with a signature house-made organic spice blend and then smothered in marinade and vacuum packed for 24 hours. Then we slow-smoke the birds whole for 6-8 hours until fall-apart-juicy. The meat is pulled and tossed in the jus and our fresh housemade grilled tomatillo salsa. Flanked by our killer organic version of the classic Austin-style ranchero beans, fresh pico de gallo, fresh guacamole, quality aged cheddar, and our Hearth and Hive soft organic corn and flour tortillas (handmade), this meal is an epic tribute to my early years in Austin and Orange County California. If I had to chose one meal to eat for the rest of my life... this would be it.
