We preferment sprouted organic canadian oats for 3 days before cooking them into a 'porraige' with organic honey and incorporating them into the sourdough. The flavour and light crispy, crackly crust is married to the soft chewy texture of the crumb; both the taste and texture of the cooked oats shine. This is an exceptional sandwich bread as well as a heavenly toast in the morning with some fromage blanc and raw creamed honey. Try it.
